What is Ultrasonic Food Processing?

Ultrasonic food processing involves a vibrating knife producing a nearly frictionless surface which does not deform food products and to which they do not stick. The surface cleanly cuts or slits products including fillers such as nuts, raisins, dried fruit or chocolate morsels without displacement or plowing.

One Dukane customer found that by using ultrasonic food cutting they could run an entire order without stopping to clean their cutting blades. Before incorporating ultrasonic food processing in their production operations, the line had to be stopped every 45 to 60 minutes to remove product stuck to the cutters.
